Last time I post the story Getting to know the coffee roasting. What is more getting to know about coffee brewing?
Um… we will go to the next step… the process after the coffee grinding calls the coffee grinding.
As I know the right coffee grinding is one important secret to brew a best cup of coffee also.

Getting to know the coffee grinding is what I wanna talk today.
Ready to follow me?
The coffee grinding is one brewing process that ground the whole coffee beans after the process coffee roasting. Both Manually and electrically the grinder are available. When grinding coffee, the coffee beans will be small size grinds. The size of coffee grinds can vary as course, medium, fine, extra fine, turkish (powder like flour), up to methods of the coffee grinding, grinder machine and grinding duration. Actually, more fine coffee grinds will have more surface area to contact the heated water. Sure that will affect the extraction rate and produce coffee taste. So we have to choose right coffee grinding which will give us opimal size coffee grinds to brew a best cup of coffee.

Now you know about the coffee grinding process.
So next getting to know the coffee grinders.
There are 2 common different type: Blade Grinder (Mill grinder) or Burr Grinder

Blade grinder (Mill grinder): The device which consist a metal sharp blade to chop or cut the roasted coffee beans into grounds. You can control the size of coffee grinds by the time that grinder run, For sure you have to take a long time to grind if we want the fine coffee grounds. This blade grinder is a kind of basic general home grinder and cheap device advantage. (Maybe this is suitable for a new coffee drinker to try lol.) But anyway bad points, coffee grounds from the blade grinders vary in sizes and the long time we grind for fine coffee grinds, more heat come out from the blade that can change and affect the coffee taste. Anyway It also produce much coffee dust that can clog up the filter (next coffee brewing process).

Burr Grinde: The device which squeezing and crushing the roasted coffee beans between a moving metal grinding wheel and a non-moving surface into grounds. The grind size is controlled by the position of the burr. So you can have the fine, consistant coffee grounds from this grinder. Wow, perfect! There are two different types.

Wheel Burr – With flat-plate burr design. The wheel spin speed is very fast and this make much more noisy and messy as well, Anyway it is not much expensive.

Conical Burr- With steel burrs and high gear ratio design. The burr spin speed rotate slower than the wheel model, so makes quieter, less messy as well. It’s not likely to clog so you can have oily or flavored coffees , I found this one is the best grinder, For sure it ‘s much more expensive than. Would you like to pay for it?

When you drink a cup of coffee, have your ever been curious about coffee flavor? This cup is smooth but that cup is more lighter or bitter? Um… the coffee aroma is not same too. Or are you bad skill? Not at all! (You and I are good. Dont blame yourself. lol)
There are several factors involved. The fact is type and processing of the coffee bean which you choose. By the way when I enjoy shopping coffee at supermarket. I read all coffee package to check the type of coffee bean before buying. So what’s else?…

Hello may I help you? Robusta or Arabica?
… Several questions are asked by coffee counter lady when I am standing in front of the big coffee self.
Coffee roasting? One question I pay attention to.
Home roasting or roasted coffee? Then she recommends some quality green coffee beans for home roasting and she show me many coffee roasting choices that she can sevice extraordinarily also.
Finally I buy coffee what I prefer.

Now thinking, maybe coffee roasting is one important thing what make different taste of coffee is. After the coffee harvesting and coffee processing, you got fresh green coffee beans. How can you brew coffee? One importent step before grinding, brewing. Well, you cannot consume the raw green coffee beans.
So getting to know the coffee roasting!

The coffee roasting is the process that changes the properties of fresh green coffee beans chemically and physically into roasted coffee beans. You will see changed characteristics: color, flavor, aroma, dryness and density. Yes, roasted coffee is what coffee drinkers perfer.

During roasting, first stage green coffee beans absorb the heat (Endothermic) become to slowly dry, change outer layer to yellow color and smell roasted. The second step 205-207°C (401–405°F) the coffee beans double in size before the first crack and then color change into light brown. Around 224-227°C (435–440°F) medium roast, the coffee beans emit the heat (Exothermic), what we see is second crack, melting or caramelization, oily surface, evaporation of coffee aroma and a lot of smoke with chaff too, and the color change to more darker shades with dry looking. Normally the roasted temperature level is between 240 – 275°C (460 – 530°F), and the period of roasting time is about 3 – 30 minutes. By the way after roasting, coffee flavor peak only 2 weeks shelf life and drop down while the fact, green coffee beans can be stored up to 2 years. What is up? Because of contact the air including the oxidation of oils and the coffee flavor evaporated, will decresed coffee beans flavor. Oh! this means loss of coffee flavor which coffee consumers expect to.

For further explaination, what chemical reaction occurs: strach in the coffee beans caramelize to sweeter sugar, maximize aromatic oils, minimize the bitterness and acidity change to flavor, other oils produce and soluble compounds. So what physical reaction changes: the structure of coffee beans change, lost water (dry looking), increase in size (more volume), decrease density (strength coffee), and change color. Obviously the roasted coffee beans vary in color: light, medium light, medium, medium dark, dark, or very dark. You can grade as roast level, the other word describing as degrees of roast. Normally they are called as typical name: drying phase, cinnamon roast, New england roast, American roast, City roast, Full city roast, Vienna roast, French roast, Italian roast, Spanish or Turkish roast. Different roasted coffee beans are determined by roasted temperature level and the period of roasting time. Yes, the different coffee flavor, aroma they are. I will talk about one by one someday. Well I know more, the deep roast level will be lower the caffeine levels in coffee. So decaffeine automatically. Which the caffeine level coffee you like. Go for it, Coffee addicts!

Commercially, amount of roasted coffee beans at any degrees are sold by suppliers. Large manufacturers mainly consists of sorting, roasting, cooling, and packaging. Each coffee industrial roaster has standard roast profiles, unique roasted techniques and professional roasters to operate with capacity roasting machines under computer control. Normally, the most common roasting machines are of two basic types: drum roasters and hot-air roasters (or fluid bed roasters), although there are others including packed bed and centrifugal roasters. Well, especially various preservation techniques are used to extend shelf life such as pressure or vacuum packing in cans or foil bags, etc. So not only standard quality but also more longer shelf life roasted coffee. Sure it’s fulfil your easy lifstyle. That’s why you see the high price tags on them!

Whereas you will be a little tired to do and of cousre lost your time. Asking yourself is it worth? Besides the common method: roasting small volumes of green beans with easy equipments: pan, stove and iron drums, you can choose various types of fresh coffee beans and other equipments, home roasting machines which are available and more comfortable.

My best tips to brew coffee. I gonna talk main 4 things

1. Selecting type of coffee bean
It is important. Arabica or Robusta? Arabica is less bitter than Robusta. Which you prefer?
You have to select what region is the coffee from. What country? Which brand? Which manufaturer? Which vender? Is it a blend? Blend from several regions countries, or varieties? a light blend or something in between?

There are three basic regions: The Americas coffee is flavors are clean, bright and mild, The African and Arabian coffee is flavors are fruity, winey and exotic and The Pacific coffee is flavors are earthy, smooth and savory. Make your choice.

Bean Roaster type? Full City (light), Vienna (medium), Espresso (medium-dark), French Roast (dark) or Extra Dark French (dark)? Which type do you flavor?

My basic tip, I like to buy fresh coffee in small amounts just been roasted, use it in a given period of time. Normally fresh coffee quality is about 1-2 weeks. I consider the packaging also. Don’t forget to keep it in an airtight container.

2. Grinding
What kind of grind is your choice?
If you buy whole bean coffee, sure you need the grinder to grind it. A burr or mill grinder is more preferable than a blade grinder, all of the coffee is grind to a consistent size. While a blade grinder will grind the coffee to more finely.

The size of the grind is affect to the taste of your coffee. Coffee tastes bitter, it may be overextracted, or grind is too fine. The contrast, coffee tastes flat, it may be underextracted, meaning that your grind is too coarse. I suggest to grind it with a burr grinder and brew it as soon as possible. Try this tip I can garuntee.

Anyway when you buy coffee, You can tell what the coffee equipment you use, a plunger pot? A flat drip filter? A cone drip filter? A gold mesh filter? So the sellers will grind it for the preparation method properly.

3. Brewing
Normally the ratio of ingredient: pouring ¾ cup of water (6 ounces) through 1-2 tablespoons of ground coffee. Water, Use fresh water free of any odd tastes or odors. Do not use distilled or softened water. If you are brewing the coffee brewing coffee machines and coffee brewing devices. We have to maintain a water temperature between 195 – 205 degrees Fahrenheit for optimal extraction. Too hot will also cause a loss taste of coffee. While too cold water will result in flat, underextracted coffee.

If you are brewing the coffee manually, have to use boil water, but do not overboil water. Turn off the heat and allow the water to rest a minute before pouring it over the grounds.

Considering brewing coffee machines and coffee brewing devices? Nowadays they are invented and sold worldwide. Which is suitable for you with reasonable price? If you got one, follow its manaul telling what you should do. Anyway I have basic maintainance tip. The most important is enough clean yet? I always rinse the with clear and hot water, then dry it with clean towel or paper tissue and make sure there is nothing left on any part of brewing coffee machines and coffee brewing devices before and after brewing.

The amount of brewing time that mean the water is in contact with the coffee grounds time. Which taste of your coffee? In a drip system, the brewing time should be approximately 5 minutes. If you are making your coffee using a plunger pot, the brewing time should be 2-4 minutes. Espresso, the brewing time is short for only 20-30 seconds. If the taste of your coffee is not proper, it is possible that you are either overextracting that mean your brewing time is too long or underextracting that mean your brewing time is short. So now you can brew Which tastes perfectly!
Anyway, once coffee grounds brewed, coffee flavors have been extracted. Never reuse those coffee grounds. So, throw them!

4.Serving
I always serve with my lovely mug. Prewarm cup or mug is a required tip before pouring brew coffee for serving hot coffee. For serving iced coffee is required strong and bitter brew coffee before adding ice. And adding black, with milk, with cream, with or without sugar, chocolate, cinnamon, etc. is various ways to serve coffee as you prefer. For me the well balance taste of your coffee: Acidity, Body, Flavor, Aroma is what I expect for. Moreover I love the art on coffee drink also. Anyway we should drink coffee as soon as possible or within 30 minutes after brewing.I have more other tips but these all are basic tips to share with you today.
Enjoy your coffee! bye

Let’s go shopping, shell we?

What is ideas to choose my best coffee?
The ideas are quality of coffee as well as flavors like. What’s more is package and of course, the price also.
At first I have to ask which type of brewing coffee bean you drink, Caffeine or Decaffeine. Um, maybe someone tell, other ready to drink coffee beverages such as instant coffee powder or canned coffee. Best quality coffee is taste which the most impression of acidity, body, aroma and flavor in coffee.
Um… Nowadays many top coffee brands are on the supermarket.
So we go to buy and taste them all?
No! I dont think so.

Back to talk about basic coffee beans I have told you before. Various types of coffee beans, nowadays they can be classified as 2 types. Arabica and Robusta which are popular and well-known by coffee drinkers worldwide.
Do you remember?

Arabica coffee trees are cultivated in the tropical and equator of America, Africa and Asia. The large number of coffee productions are in Brazil, Kenya, Java and Ethiopia. And Arabica coffee is superior in quality. A rich smooth body flavor, a pleasant bitter aroma, a light hazel to reddish crema, slightly acidic and chocolately.

Robusta coffee trees grow in the eastern hemisphere. They are most commonly cultivated in West and Central Africa, South-East Asia and some areas of South America. Robusta coffee has a strong bitter flavor and less coffee aroma but double caffeine more than.

If you want the best quality coffee, choose Arabica coffee. In contrast to someone loves the Robusta coffee, maybe the caffeine is a reason. So choose what you flavor.
Right now, the problems are which brand on the shelves, Arabica or Robusta?
How do we know where they cultivated? where is commercial manufacturer?
Ah… Most things tell you on the package.

The package is more interesting also, Not only the attractive package but also more additional informations that printed on. What coffee brand? The type of coffee beans? Coffee cultivation region? Commercial manufacturer? The coffee processing? Description of coffee beans? And more coffee details about an expiration date and guarantee institutes that confirm more confidently. (we can drink, lol).

Normally package for coffee i see must be vacuum and sealed container such as bag (paper, film, or foil ..etc) or jar (glass, aluminium or plastic … etc) which is light, humidity and air protection materials. Anyway I perfer a jar, just only my cute collection. The choosing idea is checking neat, not broken and seal package always be completed before opening. for what? Yes, to maintain dry, fresh, characteristic and flavor coffee inside.
So feel good for me to choose one entirely.

Nowadays coffee brands, coffee machines and coffee brewing devices invented and sold worldwide.
Um, feel hard to make a decission?
Maybe no, if I wanna try new coffee brands. Because I got many informations from the advertisements, demonstration shows on TV and also in magazines. Not only the superstars on the advertisements I pay attention. I also see what coffee brewing method they try to show. So that reminds theirs coffee product brands whole days, … every time! The more we know, the better we do.
However I bet you never believe without tasting it.
Just choose it as you flavor.

And the last idea is the price. In fact, good quality must go together with high price. I pay more for the best coffee brand. So up to your taste and your budget. I recommend to buy big size package with long expiration, which comparision of quantity is cheaper than, worth it! If u want cheap coffee as on sale or promotion, just warn you to more be careful! Not often that the seller keep a good one on sale or a promotion (25% off , buy 1 free 1 or 2 ,…) at the shelves. Only speacial occasion, perhap it’s a big promotion. However I had bought coffee 1 free 1 last month. Maybe you ask me, are you serious? Lol, I am lucky. It was not really bad.

Anyway, I always keep on my mind. “Just be wise to choose.”

I consider variety brewing coffee drinks, adding with a little sugar, milk and cream or not. I am curious how different between each coffee drink in each coffee shop is, not only coffee flavors, colors, but also aromas. Though each cup of coffee is brewed with same recipe ingredients.
‘Cause the coffee trees are cultivated in different regions and countries. Many environmental factors such as geographic location, climate and water affects coffee bean flavors, colors and aromas. Yes, that is characteristic and quality variations they are. Focus to the various types of coffee beans, nowadays they can be classified as 2 types. Arabica and Robusta which are popular and well-known by coffee drinkers worldwide.

Coffea Arabica, known as Arabica coffee.
The primitive specie of coffee tree. It is originally native to the Ethiopian highlands in Yemen, a part of the Arabian Peninsula. Which name “Arabica” refers to. And Arabica coffee is superior in quality.
Arabica coffee trees grow more difficult than other coffee species. It’s important that appropriate temperature (15 – 25 degrees centigrade) and environment is required for perfect harvest. They must grow in high altitude at least over 1000 metres (3,000 feet) above sea level with intensive climate conditions.
The Arabica coffee bean is larger and elongated, with a twisted groove. As you drink Arabica coffee you can have a rich smooth body flavor, a pleasant bitter aroma, a light hazel to reddish crema, slightly acidic and chocolately, which coffee lovers suppose for.
Um, delicate taste!!!
Nowadays Arabica coffee trees are cultivated in the tropical and equator of America, Africa and Asia. The large number of coffee productions are in Brazil, Kenya, Java and Ethiopia.
Coffea Canephora, known as Coffea Robusta or Robusta coffee.
It is originally native to the western and central parts of Africa to Guinea, Uganda and the south of the Sudan.
Robusta coffee trees grow eaiser than Arabica coffee. They can grow in low altitude between sea level and 800 meters elevation ranges with warmer climate conditions. Highly resistant to coffee leaf rust disease and less care are requaired. So it’s easier to produce in a huge quantities without failure. ‘Cause their beans are more robust than other types. Which name “Robusta” refers to.
The Robusta coffee bean is smaller in size, rounder with a straight groove. Robusta coffee has a strong bitter flavor and less coffee aroma but double caffeine more than Arabica coffee. ‘Cause the lower Robusta coffee quality and larger quantities. So they are generally processed by commercial manufacturers such as coffee canned and instant coffee, etc..
Sure, better taste, and easier to drink they are sold as cheaper price coffee drinks.
Nowadays Robusta coffee trees grow in the eastern hemisphere. They are most commonly cultivated in West and Central Africa, South-East Asia and some areas of South America.

Arabica, What the most coffee lovers normally choose to consume. Arabica coffee has a superior taste, richer flavor and more delicate aroma but less caffeine than Robusta coffee and the other types. Yes, why Arabica is more expensive than. Commonly Coffea Arabica about 75-80% of the world’s coffee trade while the others is about 20-25%. Anyway blending Robusta coffee beans in commercial manufactories have a better taste. Easy to drink and cheaper price make Robusta coffees become popular beverages for coffee drinkers worldwide also. Right now you will get an idea what your best coffee choice is.
Beside the fact that types of coffee beans, the variations names of coffee as well. You will find various brands whatever manufacturers produce. What more interesting coffee secrets are! So not just the end?

Sure, I will talk about them further.
